Greetings lovelee0909,
Thanks for visiting the Apple Support Communities! I understand you're unable to open Image Capture, as you mentioned you receive an alert that the application is being updated.
To help isolate this behavior, I suggest attempting to open Image Capture while your MacBook Pro is in safe mode. Further, testing the behavior with a different user account can help to isolate the issue. You can see those steps from the following guides: Use safe mode to isolate issues with your Mac & How to test an issue in another user account on your Mac
Let me know how it goes from here.
Kind regards.

On a MacBook Pro (15-inch, 2017) running macOS High Sierra I have connected an iPhone X via a Lightning cable and am transferring all the photos and videos taken with the iPhone to a folder I created on the MacBook using Image Capture. Enter the URL of the webpage that you want to capture. Select the image format for screenshot and click Capture the webpage button. You will be shown the full screenshot. Take right click on the image and save it in your computer. Both the above methods work for both Mac OS as well as Windows.
